Equipment notes

The Chemex was invented in 1941 by Peter Schlumbohm, a German-born chemist working in the United States. Drawing on the laboratory flasks and funnels of his trade, he fused brewer and server into a single piece of glass, and the resulting hourglass form has entered the permanent collection of the Museum of Modern Art in New York. This is the smallest classic model: a glass body wrapped in a wood collar and leather tie, topped with a dedicated half-moon FP-2 filter folded into a cone. The bonded paper is rated by the maker at 20-30% thicker than standard filters, catching oils and fine particles so thoroughly that the cup comes out remarkably clean, bright, and almost tea-like in texture. Because the thick filter slows the flow of water, grind a step coarser than you would for a V60 and let the drawdown take its time. The 3-cup suits one or two servings and slips easily into a small kitchen. It is a brewer for someone who wants to craft a clean, unhurried cup for themselves or one other person.
