Equipment notes

Gold Filter is the flagship product of Cores, a specialty coffee equipment brand launched in 2013 by Oishi & Associates, a Tokyo-based housewares company. It was developed together with Kentaro Maruyama of Maruyama Coffee, one of Japan's leading specialty roasters, through repeated taste tests comparing stainless steel, titanium, and gold. Pure gold plating was chosen because gold is chemically inert and does not react with coffee, so it does not distort flavor or aroma. The brand's motto, "Coffee as it is," grew out of this filter. Used on its own without a paper filter, the gold-plated stainless mesh has vertically elongated slots instead of round holes, punched from the inside out for a smooth water path. It resists clogging and drains quickly, suiting short, high-temperature extraction. Coffee oils that paper would absorb pass straight into the cup for a fuller body and aroma, while fine particles also pass through and leave a little sediment at the bottom. A medium to medium-coarse grind, slightly coarser than for paper pour-over, is recommended, and cleanup is just a rinse with water. Effectively permanent and paper-free, it suits specialty coffee drinkers who want the texture of oils and the character of the bean as it is.

Filters that fit

The filter is built into the brewer, so there is nothing extra to buy.
