Equipment notes

The Delter Coffee Press is an injection brewer created by Mark Folker of Brisbane, Australia, the designer behind the Trinity One. Funded well beyond its goal on Kickstarter in late 2018, it began shipping in early 2019 and has since spread to home brewers in many countries. At its core is the Jet-Seal, a silicone valve that keeps water and coffee separate. Water in the upper chamber never touches the bed until plunger pressure forces it through small openings as fine jets. With no immersion and no stirring, every pour is isolated and controlled; the brewer resembles an AeroPress, but the extraction sits closer to percolation than to full immersion. Use a medium-fine grind, finer than French press and coarser than espresso, then press in stages: a first press to wet the bed, a short pause, and gentler pulses to finish in two to three minutes. If pressing feels hard, coarsen the grind. It suits anyone who wants a clean, bright, pour-over-like cup from a portable press.
