Equipment notes

A 1-2 cup dripper from TORCH, a Japanese coffee tools brand said to have been founded by Takayuki Nakabayashi, a former cafe owner. It arrived as the smaller sibling of the brand's signature Donut Dripper, takes its name from the mountain-like silhouette it shows when turned upside down, and is fired in Mino-yaki porcelain. A large center outlet at the base drives a fairly quick drawdown, while five small holes set in a star-shaped indentation around it meter the air flow to keep extraction stable. Two internal steps briefly hold the descending water and lift the coffee bed slightly off the wall, encouraging a clean, layered extraction. Kalita wave-style flat-bottom papers are the natural fit, though cone papers can also be seated, and the choice of filter noticeably shifts the character of the cup. Because flow runs fast, it rewards a slightly finer grind than usual and a generous first pour. It suits brewers with some pour control who want to draw out the acidity and clarity of light to medium roasts.
