Pro Brewing is a manual hand grinder in the Pietro line, made by Fiorenzato of Italy, with 58mm vertical flat steel burrs. The standard M-Modal burr was designed in collaboration with Lance Hedrick to target a unimodal particle distribution and minimal fines, and uses a DLC coating over Bohler M340 stainless steel. Micro-stepped adjustment, a magnetic catch bin and a retractable lever tailor it to a filter workflow. Flat burrs tend to narrow the distribution, lifting clarity and aromatic expression, and the 58mm size gives generous throughput and consistency for a hand grinder. The vertical burr alignment and unimodal geometry cut fines, aiming at a transparent, aromatic cup especially in filter and slow methods. Fine step adjustment supports steady, repeatable dial-in as beans change. Because it is hand-cranked rather than electric, it fits home users who want precise control over filter and pour over, and enthusiasts seeking large-flat cup quality by hand.
