Fellow, founded in San Francisco in 2013, started with the Duo Coffee Steeper on Kickstarter and made its name with the Stagg kettle. The Stagg [X] is the single-cup dripper in the Stagg pour-over line, focused on brewing one cup of about 300ml (10oz). Compared with the taller [XF], the [X] keeps a lower profile suited to a traditional slow, continuous pour. Steep walls, a flat bottom, and a hole-and-bump floor pattern regulate flow while helping prevent clogging, so water can pass evenly through the whole coffee bed. The double-wall, vacuum-insulated stainless body is designed to keep brewing temperature stable throughout the brew and keeps the coffee bed from cooling quickly. Together these features aim at an even, steady extraction from one cup to the next. The built-in ratio aid allows rough dosing without a scale, and repeating small pulse pours helps keep temperature and bed depth consistent. Rinsing the dedicated paper filter before brewing helps avoid a papery taste. This is a dripper for someone who brews one cup every day and wants it steady, without temperature drift.
