Equipment notes

Fellow, founded in San Francisco in 2013, got its start on Kickstarter with the Duo Coffee Steeper and made its name with the Stagg kettle. The Stagg [XF] is the larger dripper in that pour-over line: taller than the [X], it holds up to about 600ml (20oz) at a time, enough for one or two cups. The structure follows the [X]: steep walls, a flat bottom, and a hole-and-bump pattern on the floor that regulates flow while helping prevent clogging. The vacuum-insulated stainless body is designed to keep brewing temperature stable, and the extra height gives headroom for more water at once. That makes it suited both to traditional pulse pouring and to fuller fill-up style brews built on a few large pours. Rinse the tall dedicated filter thoroughly so no papery taste remains, dose roughly with the built-in ratio aid, and pour in either small pulses or a few large additions. The temperature-stable design carries over from the [X] as well. This is a dripper for anyone who wants to brew a larger batch, a second cup included, without worrying much about technique.
