Equipment notes

UFO is a dripper brand designed by 3D-printing designer Kenzie Chay and barista Jay Kim and produced in Korea. Aiming to keep the cup profile of a cone while sharply improving consistency, they built the brewer around an unusually wide 80-degree wall paired with recessed air channels. The wide wall spreads the coffee into a shallow, flat bed, so bed depth barely shifts as your dose changes, while air channels carved into the wall keep an air path open behind the paper and prevent vacuum stalling. The ceramic version's core idea is a graded wall, thinner at the rim and thicker at the base: it sheds unneeded thermal mass up top and concentrates heat where the dripper meets the server, holding slurry temperature steady through the brew. Cone filters do not fit; it takes flat papers only, such as Sibarist FAST/B3 or Kalita Wave 155, and with fast papers you can grind finer than a V60 without clogging. It is a dripper for brewers who want temperature pinned down as a variable and a clean, structured cup they can reproduce day after day.
