Equipment notes
The HG-2 Mk2 is a manual grinder from Weber Workshops, based in Taipei, Taiwan. It is a hand grinder built around an 83mm conical steel burr, and its identity is turning by hand one of the largest conical burr sets available commercially. A conical burr leans toward body and texture, and the large diameter helps steady cutting even by hand. The Mk2 adds a two-speed transmission that Weber designed and built in-house, so a low gear raises torque to grind light roasts with less effort while a high gear speeds through dark roasts. Stepped adjustment makes settings clearly repeatable. It suits manual-grinder enthusiasts who enjoy the feel of hand grinding but also want to handle light roasts and the espresso range without strain.
