Equipment notes
KONO is the equipment brand of Coffee Syphon Co., the Tokyo company that built Japan's first domestically made coffee siphon in 1925, and its Meimon filter of 1973 is regarded in Japan as the original conical dripper. The Meimon 4 scales that design up to handle two to four cups. As on the original, ribs sit only on the lower section, so higher up the wet filter clings to the wall, and coffee that has steeped fully in the semi-sealed chamber drains through the single large hole at the bottom. Because the larger chamber deepens the coffee bed and lengthens the contact time between water and coffee, the balance comes out better with a grind slightly coarser than on the 1-2 cup size. You can still use the precision of point-drip technique as is, but when brewing several cups the trick is to aim for a total brew time of around 3 minutes and adjust your pour rate accordingly. Besides KONO's own conical filters, V60 size 02 conical paper filters also fit. This is a dripper for anyone who wants even the coffee shared with guests brewed with the rich, heavy body of nel-drip style.
