Equipment notes

A conical metal pour-over dripper from Timemore, founded in Shanghai in 2012, created in collaboration with 2021 World Brewers Cup champion Matt Winton. Rather than throttling the flow, it builds on Winton's counterintuitive flow-rate theory that adding contact points between filter and dripper actually speeds up drawdown, realized here on Timemore's Crystal Eye line. The stainless steel brew core is metal-injection-molded with dense multi-layer ribs arranged into a three-zone pressure structure of stabilization, sealing and acceleration, while staggered contact points spread water evenly across the coffee bed and suppress channeling. Air vents around the rim equalize pressure so the paper never seals against the wall, and an insulating sleeve moderates heat loss from the metal body. It takes readily available 60-degree cone 01-size paper filters such as the Hario V60 01. Because the flow runs fast, grind slightly finer than you would for a plastic cone, and even a small number of pours will finish without late-stage stalling. It suits pour-over enthusiasts who want a clean, sweetness-forward cup with no fear of a clogged brew bed.
