Sandwich Extraction: Separate fine and coarse grounds with paper filters, then brew in five pours. Use the six-rib Canyon base and prepare two paper filters. Sift with a 900µm sieve and weigh each fraction. Use one eighth of the total dose as fines on the lower paper and seven eighths as coarse grounds above the second paper.

Brewing tips

  • Avoid stirring or shaking the two layers together. Pour the first water gently to wet the upper layer evenly.
  • At the 16g reference dose, the 15g first pour reconciles the stated total with the later pours. The 3:25 total is a Pourist execution target; also check that the final water has drained.
  • The competition grinder's setting 10 and highest speed do not transfer directly to other models. 900µm is the sieve aperture, not a particle-size target.
