Brewing tips

  • The source grinds slowly (low rpm), blows off the chaff and sifts the fines out at 200 µm before dosing 18 g. The grind is 31 clicks on a Comandante X25 Trailmaster with Tigershark burrs.
  • Fit two paper filters inside the Flow Control filter cap. The cap holds the water back until you press, so the AeroPress stays upright throughout.
  • The water is 125 ppm, made with an Apax Lab prototype, heated to 84°C. The bypass water that goes into the server first is at 50°C.
