Brewing tips

  • Pour the first addition at about 8 g per second to wet the whole bed, the second at up to 10 ml/s, the third above 10 ml/s, and the last as fast as the kettle allows. Leave almost no gap between the first and second so the bed stays moist.
  • A drawdown finishing around 2:00-2:10 is ideal and up to 2:30 is still nice. If it runs long, pour the last addition a little less aggressively or start it closer to 1:00.
  • Use very soft water, around 20-25 ppm general hardness and 5-10 ppm carbonate hardness, to bring out the coffee's natural acidity.
  • Going above 88°C tends to mute the aromatics that make this recipe special. Trying below 85°C is worth a go.
  • This is built on stock Hario paper. With faster, thicker filters the water drains too quickly, so pour more aggressively to extend the drawdown.
  • If grounds stuck on the walls bother you, give the top centimeter a light stir with a spoon right after the last pour. Leaving them is fine for the cup.
