Lance Hedrick Hario V60 01 · One and Done

Original title: One and Done

Lance Hedrick's V60 recipe, refined for close to two years to work across grinders and coffees. Two 45 g blooms, then the rest of the water in one pour at 1:00, with the grind set so the total brew lands between 2:00 and 2:30.

Brewing tips

  • Pour the blooms at 5-10 ml/s; anything that isn't blasting the bed works. Make the final pour a rapid 9-10 ml/s, staying in the center with small coin-sized circles to stir the bed well.
  • Don't swirl during the blooms. The second bloom releases the remaining CO2 so the big final pour doesn't channel around rising bubbles.
  • Use 93-96°C for light roasts, 90-93°C for medium roasts, and below 90°C for anything darker. Lance brews almost everything at 93°C.
  • Set the grind so the total time, blooms included, is 2:00-2:30. The brew is done when the bed looks dry. Aim for about 2:15, a little longer if you like it slightly stronger.
  • If it still drains too fast even at a fine grind, pour the final addition a bit faster from higher. If you ground too coarse, a light swirl after the final pour slows it by 10-15 seconds.
  • The base ratio is 1:15. For a lighter cup go to 240 g (1:16) or 255 g (1:17) of water; for a stronger cup with more intense acidity you can go down to 1:13.
