The God Recipe

Tetsu Kasuya's Hario Switch recipe: two open-valve pours at 93°C draw acidity and sweetness first, then the valve closes at 1:15 for a 75°C immersion and opens at 1:45 to finish around 3:00.

Brewing tips

  • Stop at 3:00 even if it has not fully drained; if the cup is too strong, add water afterwards. Running past three minutes usually means the grind is too fine.
  • The first two pours are 60 g each by default; 50 g then 70 g brings out more sweetness and the reverse more acidity. Water at 93°C or just above 90°C works, and up to 300 g total is fine.
  • The coffee finishes cooler than usual, so preheat the cup well. The grind is roughly 20 clicks on a Comandante and not a strict figure.
