The Vario W+ is an electric grinder from the US brand Baratza (acquired by Breville in 2020), the steel-burr version of the Vario line. It uses a 54mm stainless-steel flat burr, and the key difference from the standard, ceramic-equipped Vario is the cutting character of a metal burr. Adjustment is the stepped macro and micro lever system. A steel flat burr generally grinds faster than ceramic and holds its cutting edge, favoring higher throughput while keeping uniformity. The flat geometry itself makes particles more even than a conical, preserving clarity, and combined with the 54mm large diameter it stably covers filter through espresso. Switching the material from ceramic to steel subtly changes the cutting feel and flavor nuance even at the same coarseness.
