The Vario is an electric grinder from the US brand Baratza (acquired by Breville in 2020). It is an all-round model using a 54mm flat ceramic burr, with a stepped mechanism adjusted by two levers, macro and micro. Ceramic flat burrs resist wear and tend to run cooler. A flat burr cuts particles more evenly than a conical, tending to emphasize clarity and uniformity, while the 54mm large diameter raises throughput and setting stability. The ceramic material transfers less heat, reducing the influence of grinding warmth, and the two-lever adjustment shifts the coarseness band widely then fine-tunes it, covering filter through espresso.
