This is the M size of the Origami dripper, made of Mino-ware porcelain in Gifu Prefecture, Japan, one of the country's long-established pottery regions. The dripper became widely known after Du Jianing won the 2019 World Brewers Cup in Boston using an Origami, and the M is the larger standard size, covering everything from a single cup to enough to share. Inside, twenty ribs standing like origami folds create space between the wall and the filter so water and air escape freely, which is why it accepts both cone and wave filters. A cone filter tends to drain faster and bring acidity and fruit notes forward, while a wave filter's pleats settle into the ribs, calming the flow and leaning toward body. Porcelain holds heat well, so a thorough preheat helps keep the brewing temperature steady. A cone filter suits a brighter cup, and a wave filter suits more sweetness and a rounder body. Changing a single filter can bring out a different character from the same bean.
