Origami Dripper S

Equipment notes

The S size of the Origami dripper is fired in the Mino region of Gifu, Japan, where Mino ware carries a pottery tradition of more than four centuries and accounts for roughly 60% of the country's ceramic production. Long a domestic favorite, the dripper reached the world stage in 2019 when Du Jianing of China won the World Brewers Cup in Boston with it, becoming the first Chinese champion at a time when the V60 and Kalita Wave dominated competition. The S size turns that heritage toward a single cup: its small coffee bed makes for a more concentrated extraction, well suited to 12-18 g single servings. Inside, twenty ribs folded like origami pleats hold the paper away from the wall so water and air escape freely, and this structure is what lets one dripper accept both conical and wave filters. With a conical filter the ribs preserve the gap along the wall, so flow runs faster and the cup tends toward acidity and fruit. With a wave filter the flutes settle into the ribs and the gaps narrow: flow slows, though it stays quicker than a Kalita Wave dripper, while body builds and channeling drops for a more even extraction. The dense porcelain has a high heat capacity, so once preheated it holds the brew bed at a steady temperature. Start with a conical filter when you want a bright, layered cup, and with a wave filter when you want sweetness and a heavier body. Swapping a single sheet of paper is enough to draw two different characters from the same beans. This is a dripper for anyone who brews one careful cup at a time and wants the filter choice itself to be part of the recipe.
