Equipment notes

The Kone 10.1 is a mini brewing dripper created by Ninety Plus, the Panama gesha producer, together with Origami of Japan. Du Jianing, who won the 2019 World Brewers Cup brewing Ninety Plus coffee on an Origami dripper, took part in its design, and the whole idea starts from brewing a precious 10-gram dose into a 150 ml serving to be savored. Its obsidian black color is drawn from the volcanic soils of the Barú volcano where the Ninety Plus estates grow. It inherits the pleated rib structure of the Origami dripper, but its slightly different geometry makes extractions run a little faster than the original. It accepts both conical and flat-bottomed papers; with the dedicated Japanese-made flat-bottom Kone Filter 10.1, the coffee forms a low, level bed that water passes through evenly, making a clean cup easier to achieve. Because small doses lose heat quickly, the fast drawdown helps the brew finish before the temperature drops too far. Preheat the dripper and server thoroughly, and start from a medium or slightly fine grind at 10 g of coffee to 150 ml of water. Pour in thin, short pulses so the small bed does not overflow. This is a dripper for anyone who wants to brew a small stash of special coffee one careful cup at a time.
