Eureka is an Italian grinder specialist based in Florence, and the Mignon Specialita is a flagship of its home line. It is an electric grinder fitted with 55mm flat steel burrs, designed with espresso as its main stage. It uses stepless adjustment, so settings move continuously without discrete clicks. Flat burrs tend to narrow the particle distribution, favoring uniformity and clarity, while the 55mm diameter is generous for home use and delivers steady throughput and consistency in the espresso range. Stepless adjustment lets you handle very fine changes in grind size during espresso dial-in, and even a small turn of the collar noticeably shifts extraction resistance. Because there are no steps, however, it helps to remember the scale mark to return exactly to a previous setting. It suits users who brew mainly espresso at home and enjoy fine dial-in. It covers filter as well, but its design center of gravity is on espresso.
