Equipment notes

Kalita is a comprehensive coffee equipment maker founded in Tokyo in 1958, and it made the three-hole wedge dripper its signature long before the Wave series. The 102-CU is the 102 format, sized for two to four cups, made in copper. The structure is the same as the plastic and ceramic 102: wall ribs and three-hole drainage help keep the flow rate steady, reducing the influence of pouring technique. What differs is the copper body. Copper conducts heat well, so the dripper warms up quickly with a brief rinse of hot water, and once warm it helps keep the temperature steady across several pours. As it ages, the copper surface gradually changes color, which many owners enjoy as part of the tool's character. Use Kalita 102 wedge filters and pour in stages after the bloom; the three-hole design is generally associated with a balanced cup. It is a dripper for anyone who wants to enjoy the material's qualities and its aging even in an everyday tool for brewing the family's coffee.
