Equipment notes

Kalita, founded in Tokyo's Nihonbashi in 1958, has long been known for its wedge dripper with three small drain holes, well before the Wave series appeared. The three-hole idea of dripping out only the good flavors before off-flavors develop, as Kalita describes it, is shared by the 101 and the 102. The 102 scales that same structure up to two to four cups. Even as the larger dose deepens the coffee bed, the three holes divide the drainage so the flow stays steady, and the ribbed walls keep channels open between filter and body through the brew. Skills learned on the smaller size carry over almost unchanged. This model has a light AS-resin (plastic) body made in Japan, so it needs little preheating and is not easily broken by an accidental drop. It takes Kalita 102 wedge paper filters, and rinsing the filter and warming the server beforehand remains a good habit. It is a dripper for someone brewing for family or guests in one go, sharing coffee with an easygoing everyday tool.
