Tsubame in Niigata Prefecture is a metalworking town that began with nail making in the Edo period and has since handled most of Japan's metal tableware production. Kalita created the TSUBAME line in collaboration with the artisans there, and this model is the stainless steel version of the Wave 185, sized for two to four cups. Only products finished entirely in the Tsubame region, from forming to surface finishing, carry the 'Made in TSUBAME' stamp. It keeps the same flat bottom and three-hole structure as the standard Wave 185, but the body is heavy-gauge stainless steel, hand-polished to finish. The thick metal body holds heat long after preheating, keeping brew temperature stable even across multi-cup brews, and the ribless, gently domed base supports the wave filter clear of the holes so drainage stays even. The filter's crimps reduce wall contact, letting the entire flat coffee bed extract at a similar rate. Use it like any wave dripper: Kalita 185 wave filters, pours divided so the water never rises above the crimps, and a preheat before brewing so the metal does not steal heat.
