Equipment notes
Kalita is a comprehensive coffee equipment maker that started in Nihonbashi, Tokyo in 1958, and its wedge-shaped dripper with three small holes in the base became the company's signature long before the Wave series. The Hasami 102 is the 102 format, sized for two to four cups, fired in the kilns of Hasami, the porcelain district of Nagasaki. As on the standard 102, even when a larger dose deepens the coffee bed, the three holes share the drainage so the flow rate holds up, and the wall ribs keep the water channels between filter and wall open to the very end. The thick Hasami-ware porcelain body has high thermal mass, so once thoroughly preheated the temperature stays stable even while brewing several cups. Warm the dripper with hot water before brewing, set a Kalita 102 or Melitta #4 wedge filter, and pour in stages after the bloom. The forgiving structure lets everything you learned on the smaller size carry over as is, making it a dripper for anyone who wants to brew coffee to share with family or guests along with the craftsmanship of the ceramics.
