Equipment notes

Tsubame, in Niigata Prefecture, is a metalworking town that began with nail-making in the Edo period and has long produced most of Japan's metal Western tableware. Kalita created its TSUBAME line in collaboration with the artisans there, and this model is that line's Wave 155 rendered in copper. It pairs the same flat bottom and three-hole layout as the standard Wave 155 with a body of copper, an especially fast heat conductor among metals, finished by artisan hands. Preheat it and the whole body warms evenly so the brewing temperature stabilizes quickly, while the tin-plated interior keeps the coffee from touching the copper directly. The character is unchanged: the wave filter's crimps reduce wall contact and the flat coffee bed extracts evenly. Use it the same way as a regular wave dripper: take Kalita 155 wave filters, pour in stages without letting the water rise above the crimps, and preheat before brewing so the metal does not steal heat. With a copper surface whose expression deepens as time passes, it is a dripper for anyone who knows the pleasure of breaking in a tool.
