Tsubame in Niigata is a metalworking town that grew from Edo-period nail making into the source of most of Japan's metal tableware. Kalita created its TSUBAME line with the city's artisans, and this wave dripper was the collaboration's first product. Only pieces shaped and surface-finished in the Tsubame area earn the 'Made in TSUBAME' stamp granted by the local chamber of commerce, and each dripper carries it. It keeps the flat bed and three-hole structure of the standard Wave 155 but is formed from thicker stainless steel and polished by hand. The heavy metal body holds warmth after preheating and steadies the brew temperature, while the ribless, gently domed base supports the wave filter clear of the drain holes so drainage stays even. The filter's crimps limit contact with the wall, letting the whole flat coffee bed extract at a similar pace. In use it behaves like any Wave: a one-to-two-cup size taking Kalita 155 wave filters, poured in stages so water never rises above the filter crimps, with a preheat recommended so the metal does not steal heat. Less sensitive to pour technique than cone drippers, it delivers consistent results. It is a dripper for someone who cares about the make and material of a tool they will touch every day.
