Equipment notes

Kalita, a coffee-equipment maker founded in Tokyo's Nihonbashi in 1958, has long made the wedge-shaped dripper with three small drain holes its signature, well before the Wave series existed. The company's stated intent for the three-hole design is to drip out only the good flavors before off-flavors develop, and the 101 is the smallest size in that classic lineup. Water spreads along the ribbed walls and then drains through three separate holes, which helps the flow settle into a steady rhythm even when the pour is a little uneven. The narrow, flat base lets water linger briefly over the grounds, an approach intended to give a balanced, rounded cup. Sized for one to two cups, it takes widely available Kalita 101 wedge paper filters and comes in several materials, including ceramic and plastic. Preheating the dripper with hot water helps keep the brew temperature stable. It is a dripper for someone who wants a dependable cup every morning without any special technique, brewed mostly for themselves.
