Equipment notes

Kalita, a Japanese coffee equipment maker founded in Tokyo in 1958, offers its Wave series in two sizes, and the 155 is the smaller one. At a time when conical shapes dominated pour-over, the Wave brought in a flat coffee bed, aiming for even extraction that leans less on the skill of whoever is pouring. Three small exit holes in the flat base divide the flow and help limit channeling, while the dedicated 20-wave filter keeps contact with the dripper wall to a minimum, so water drains evenly instead of pooling; the air layer between wall and filter is also said to help keep the brewing temperature steady. Thanks to its narrow base, the 155 keeps the coffee bed reasonably deep even at small single-cup doses, helping form an even extraction layer for one or two cups. Preheat the dripper, start with a medium grind, bloom, then pour in a few gentle additions. Even a slightly unsteady stream is absorbed by the flat bed, which helps the cup stay consistent from brew to brew. It is a dripper for single-cup brewers who want steady results every day, and for anyone just getting started with pour-over.
