Equipment notes

Tsubame, in Niigata Prefecture, is a metalworking town that began with nail-making in the Edo period and has long produced most of Japan's metal Western tableware. Kalita created its TSUBAME line in collaboration with the artisans there, and this model is the Wave 185, sized for two to four cups, rendered in copper. The structure matches the standard 185: a flat bottom, three-hole drainage, and the dedicated 20-crimp wave filter reducing wall contact for even extraction. What differs is the copper body, an especially fast heat conductor among metals. Once preheated, the temperature stabilizes quickly so the brewing environment stays steady even at multi-cup volumes, and the tin-plated interior keeps the coffee from touching the copper directly. Use it the same way as a regular wave dripper: take Kalita 185 wave filters, pour in stages without letting the water rise above the crimps, and treat preheating before the brew as all but mandatory. It is a dripper for anyone who wants to brew coffee for sharing at a stable temperature while enjoying a copper expression that deepens with the years.
