Equipment notes
Kalita is a comprehensive coffee equipment maker founded in Tokyo in 1958, and its three-hole wedge dripper has long been a familiar sight in Japanese kissaten-style hand drip. The 103 is the large size in that wedge lineage, a high-volume format that brews four to seven cups at once. The three holes share the drainage and steady the flow rate just as on the smaller sizes, but with the bed grown much wider, where and how you distribute the water matters more. A thin, steady stream that wets the broad coffee bed evenly into its corners helps achieve a uniform extraction, and the dripper takes the 103 wedge filters made for this format. After the bloom, pour calmly in several stages, and with a ceramic body it is best to preheat thoroughly so the dripper does not draw heat from the water. It is a dripper for anyone who has to brew many cups repeatedly at consistent quality, kissaten style, or who takes charge of the coffee for a gathering.
