Equipment notes
Kalita is a comprehensive coffee equipment maker that started in Nihonbashi, Tokyo in 1958, and its wedge-shaped dripper with three small holes in the base became the company's signature long before the Wave series. The Hasami 101 is that classic 101 fired in the kilns of Hasami, the porcelain district of Nagasaki. The structure is unchanged: water spreads evenly along the ribs on the walls, and drainage is split across the three holes. Even if your pour is somewhat irregular, the flow rate settles itself, and the design resists clogging better than one that relies on a single hole. The thick Hasami-ware porcelain body has high thermal mass, so once thoroughly preheated it keeps the temperature stable throughout the brew. Warm the dripper with hot water before brewing, set a Kalita 101 or Melitta-style wedge filter, and pour in stages after the bloom for a balanced cup. It adds the craftsmanship of a Japanese porcelain district to the forgiving nature of the three-hole design, making it a dripper for anyone who wants to enjoy their daily cup or two together with the material and character of the ceramics.
