The V60 Alpha is a ceramic dripper in which Hario Taiwan redesigned the standard V60, and the 02 is the size that covers everything from a single cup to servings shared among several people. The skeleton of a 60-degree cone and a large single drain hole remains, but the spiral ribs that once protruded from the wall have been inverted into concave grooves carved inward. Twelve concave grooves in the wall hold the paper filter against the smooth ceramic surface, so water travels down through the entire coffee bed rather than slipping through gaps beside the filter. With less bypass, extraction efficiency rises at the same grind size, so the trick is to loosen the grind slightly coarser if signs of over-extraction appear. The thick matte ceramic body, once preheated, keeps the temperature steady throughout the brew. Use it like a standard V60, pouring in stages after the bloom, though its high thermal mass makes preheating before brewing practically essential. It takes V60 02 cone paper filters. This is a dripper for those who want to keep the V60's freedom of pouring while sharing cups in which the vessel itself has tamed the variable of bypass.
