Equipment notes
Hario built this all-stainless dripper for brewing without paper filters. The official pitch is to combine the clarity of a paper-filtered cup with the coffee oils that only a metal filter lets through. Two layers of finely etched stainless mesh are stacked together, a design meant to tame the muddiness of conventional metal filters while ending the need for consumables. The double mesh wall holds back most of the fines while letting coffee oils pass, producing a heavier, more textured body than a paper V60. Hands-on reviews consistently find less sediment at the bottom of the cup than a French press and even less than typical single-mesh metal filters. The fine mesh does hold water against the wall, though, so at the same grind the brew runs noticeably slower than paper. That is why the standard move is to grind one or two steps coarser than your paper setting. Grind fine and the mesh clogs, dragging the brew out. After use, knock out the grounds and rinse the fines from the mesh, and the dishwasher is fair game. This is a dripper for someone who wants to quit paper filters and would rather have the rich texture of coffee oils than absolute cleanliness.
Filters that fit
The filter is built into the brewer, so there is nothing extra to buy.
