Equipment notes
Hario was founded in Tokyo in 1921 as a maker of heatproof laboratory glass. The V60 grew out of long trial and error aimed at bringing the clarity of cloth-filter (nel drip) coffee to a paper filter, and it reached the market in the mid-2000s; its name comes from the V-shaped cone and its 60-degree angle. The 03 is the largest of the three sizes, made for occasions where coffee is shared. The V60 geometry is unchanged: a 60-degree cone, spiral ribs, and a single large drain hole that barely restricts flow. With a wider bed and a larger dose, the water path is easier to disturb, so a slightly coarser grind than in the 02 and a steady, consistent pour become all the more important. It takes dedicated 03 conical paper filters. The fundamentals are the same: rinse the filter, bloom, then divide the pours evenly in a spiral. On a large bed, though, any unevenness in the pour shows up more clearly in the cup, so a calm, even rhythm helps. Get it right, and the V60's clear, expressive character carries over even when brewing several servings. This is a dripper for those who want the coffee they share with guests brewed as a V60 cup too.
