Equipment notes
The Hario Switch is the hybrid immersion-and-percolation dripper Hario introduced in 2019, and the 03 is its larger size. Conceived as an answer to the popular Clever Dripper, it was designed to serve both immersion and pour-over devotees with a single brewer and to let the two methods be combined freely within one brew. The 03 is the size for occasions where the coffee is shared rather than made for one. The design sits squarely on the V60 platform. A stainless steel ball at the base follows the switch: pushed up, it seals the outlet for a still immersion bath; released, it opens into the fast, V60-style percolation the cone is known for. The heatproof glass bowl does not hold heat for long, and the larger the water mass, the more the temperature drop during a steep shows up in the cup. It takes dedicated V60 03 conical paper filters, and the wider, deeper bed also makes drawdown longer than on the 02. A good starting point is pure immersion: water around 94°C, valve closed for roughly two minutes, then opened for drawdown. With the bigger dose, preheat generously and grind a touch coarser than you would on the 02 to offset the longer drawdown. The closed valve gives a soft, mellow cup; the open valve builds body and sweetness. It is a dripper for anyone who wants to carry immersion's forgiving safety net over to the table where coffee is shared.
